INSTALLATION INSTRUCTIONS 1. Installation of this unit must only be undertaken by qualified service personnel. Improper installation of the unit may result in damage to the unit and/or injury to the operator. 2. This appliance must.. 2-a. be installed in an adequately ventilated room with provision for adequate air supply to the unit and combustion chamber. 2-b. have a minimum clearance of 8.0 in. on the sides and rear of the appliance to allow for service, cleaning and proper operation of the appliance. 2-c. confirm with your local codes for installation. 2-d. be placed in an area free and clear from combustibles. 2-e. be set at the manifold pressure specified on the name plate. 2-f. have a pressure regulator installed set at 3-1 /2"water column for natural gas usage (*for propane gas 9"water column.) 3. Gas piping should be sized to provide a supply of gas sufficient to meet the demand of the appliance without undue loss of pressure at the equipment. Under no circumstance shall the feed line to the installation be less than 3/4 in. diameter pipe. Should the supply piping require pressure testing exceeding 1/2 psig (3.45 kPa),the unit and its shut off valve must be disconnected from the system. The unit's,individual shutoff valve must be closed during any pressure testing conducted at or more than 1 /2 psig. 4. Do not obstruct the flow of combustion products and ventilation air either to or from the unit. 5. Proper clearances must be maintained- 8.0 in. from all sides and the rear of the appliance from combustible and noncombustible locations - as stated on the name plate of this appliance. 6. Adequate flue ventilation equipment must be supplied by you, the owner. This equipment must be approved by a nationally recognized testing agency - i.e., Underwriters Laboratory (U.L.). 7. The unit must be installed according to the clearances listed on the name plate. If servicing and operating on the unit requires more clearances,then those clearances must be followed. 8. It is highly recommended that you install a manually operated shut off valve on the inset side of the regulator of this appliance to turn on and shut off the gas supply to the appliance. 9. Back draft protection must be installed using a horizontal draft diverter. II. OPERATOR INSTRUCTIONS WARNING: NEVER CHECK FOR GAS LEAKS BY USING AN OPEN FLAME! 1. The unit must be cleaned on a regular basis to ensure proper operation of the unit. There are no special cleaning agents recommended, any detergent will suffice. 2. Do not obstruct the flow of combustion and ventilation air. The vent holes on all sides of the unit must be clear from obstruction. 3. Do not store any combustible material in the storage area underneath the burner support, and there must be a mininmm of six inches clearance between the top of the stored material and the bottom of the front panel at all times. 4. The appliance area is to be kept free and clear from combustibles. 5. All maintenance and repairs should be referred to Empire Bakery Equipment,their authorized representative, or to the qualified local service personnel. III. LIGHTING INSTRUCTIONS WARNING: MAKE SURE ALL VALVES ARE IN THE CLOSED POSITION BEFORE CONNECTING GAS TO THIS UNIT WARNING: DO NOT OPERATE KETTLE WITHOUT WATER OR LEAVE KETTLE EMPTY OVERNIGHT AS DAMAGE MAY OCCUR. 1. After gas has been supplied to the unit.WAIT FIVE MINUTES BEFORE ATTEMPTING TO LIGHT UNIT. This is done because of the gas that lingers in the unit after shut down. 2. Depress the red safety valve round knob while placing a lighted match (extra long fireplace matches) at the pilot head. Hold the knob down for approximately 30 seconds, release red button--pilot flame should stay on. 3. Repeat steps I and 2 until all pilots are lit. Rotating the pilot adjusting lever will increase or decrease the pilot flame size. 4. Tum the burner on by turning the manual gas valve handle to the "ON"position. IF FOR ANY REASON THE PILOT BECOME EXTINGUISHED, REPEAT LIGHTING INSTRUCTIONS BEGINNING AT STEP 1 ABOVE. IV. SHUTDOWN INSTRUCTIONS 1. Nightly Shutdown: a. Turn the burner manual valve handle(s)fully clockwise to the"off'position. b. Close main gas line. 2. Seasonal Shutdown: a. Turn the burner manual valve handle(s) fully clockwise to the`off'position b. Rotate the pilot adjustment screw to the right to decrease the pilot flame until it extinguishes completely. V. M i I MU-RE-G-00 20 SECTION : RECOMMENDED UTILISATION USAGE INSTRUCTIONS BEFORE OPERATING, smell all around the appliance for gas. Be sure to smell close to the floor because some gases are heavier than air,like propane, and will settle on the floor. • START UP (If you use an oven with stone shelves,see pg.29) 1. Open the front access door to expose the electric box and turn the breaker to the on position. If the preset time icon,on the control panel, is flashing,adjust the hour on the control panel using the timer arrows 2. Press the preset timer button to save settings. This only happens if there is an electric power outage or at the first start up of the oven. 3. Press the ON/Off button. 4. Set the thermostat to the desired temperature 5. Push the shelve rotation arrow to start the shelves revolving. 6. Make sure that heat evacuation outlet door is tightly closed, use the quick evacuation knob situated above the viewing window. 7. If you need to restart the oven,wait 5 minutes before beginning, making sure there is not any gas accumulated with in the oven. PRODUCT LOADING 1. Make sure that the oven has reached the desired temperature, if so,follow the instructions below. 2. As needed and if you have the optional steam system press the push button "steam",following the wait cycle when the fan stops for approximately 2 minutes. 3. Stop the shelf at the door level. 4. Load the shelf evenly by putting more or less the same weight on each shelf. (Put the same number of pans on each shelf or the same weight.) 5. Close the door press the"steam"button once again only if you have this option(not mandatory) 6. To load the next shelf,activate the shelves upwards,once the shelf stopped at the door level, load the shelf, close the door and press again the push button"steam",and so on for each shelf. 7. Set the timer to the desired baking time and start it. 8. If needed,to remove some steam,the user can open the heat evacuation outlet door with the quick evacuation knob situated above the viewing window.Afterwards,you must close it to keep the heat inside.We suggest opening the heat outlet door 2 or 3 minutes after the last steam injection. Keeping it open for 1 or 2 minutes,and then close it. SHUT DOWN INSTRUCTION 1. Open the heat outlet door with the quick evacuation knob to lower the oven temperature. 2. (hereinafter "Picard") guarantees to the client on whose premises they are originally installed (hereinafter the"client"), provided the equipment is installed in Canada or the continental United States of America, that the equipment it manufactures is free from any manufacturing defect in material and factory workmanship for a period of one(1) year for parts and a period of one(1) year for labour calculated from our date of installation, except as provided herein and subject to the terms,conditions,exclusions and limitations contained in this Limited Warranty. Labor costs to repair or replace defective parts presenting a manufacturing defect only shall be covered during this Limited Warranty period,only when performed by an authorized Picard service agency. However, if repair or replacement requires travel over 50 miles by the technician from the nearest authorized Picard service agency, or is to be done during a legal holiday or requires overtime labor after regular business hours from Monday to Friday,the additional labour costs shall not be covered by this Limited Warranty and shall be at the client's own expense. When installation of Picard equipment is done by an authorized dealer or any other person than one of Picard'employees, even in the presence of a Picard supervisor, the dealer or person installing shall be the only person responsible of any faulty installation of the equipment, no warranty being given by Picard on an installation performed by any person other than one of Picard's own employees. No labor warranty applies in such cases. Defective parts shall be replaced by Picard (if presenting a manufacturing defect only and not if broken, altered or damaged by faulty installation), without any' coverage of warranty for labour costs involved in such cases. The client must in such a case present his claim relating to labor directly to the installer of the equipment. Installation, maintenance or cleaning must at all times be done in accordance with Picard's specifications, including those appearing in the client's manual. During the warranty period, defective parts presenting a manufacturing defect only will be either replaced or repaired, at the sole option of Picard. All warranty work under this Limited Warranty must be pre-authorized by Picard, following Picard's in force claim procedure. All warranty work, performed by a person other than an authorized,Picard service agency, shall void this Limited Warranty. Parts repaired or replaced shall continue being covered by this Limited Warranty until expiration of the warranty period of the original parts. Repair or replacement of parts shall in no way extend the original warranty period. Picard will pay for express courier (expedited 2 to 3 days) shipping charges for parts (with the exception of excessively large or heavy items) covered under this Limited Warranty, only if the equipment is not operational, provided the client returns the defective parts to Picard within 30 days from the equipment being reported defective to Picard,freight prepaid by the client. The difference between express courier (expedited 2 to 3 days) and the extra charges to ship express courier(next day)or for excessively large or heavy items will be at the client's expenses. Revised:2009-06-15 FUS-0100-1 MU-RE-G-00 40 s The claim procedure for repairs or replacements of parts during the warranty period is as follows: 1. The client must immediately inform Picard in writing of any suspected defectiveness of the equipment, stating with as much details as possible the problems encountered and provide digital photos of the equipment and alleged defective parts upon request from Picard, together with the proofs of purchase and installation of the equipment, evidencing the dates of purchase and installation. 2. The client must contact Picard's claims department to obtain a claim authorization number and, at Picard's sole option, either Picard's approval for warranty work to be performed on site by an authorized Picard service agency or Picard's specific instructions as for the return of the alleged defective parts to Picard. 3. The client must at all times collaborate with Picard and the persons designated by Picard regarding claim procedures, inspection of the alleged defective parts and claim settlement. 4. If Picard decides on replacement of the alleged defective parts, including in cases of the equipment not being operational, Picard will ship and invoice new parts to the client. Shipping costs are as abovementioned in such a case. 5. Credit for these new parts will be issued by Picard upon receipt of the defective parts and subsequent determination by Picard that the parts are, in fact, defective, at its sole discretion. If the parts are determined not to be defective,the client must immediately pay for the new parts he was invoiced for, together with the shipping costs to return the parts received and inspected by Picard. 6. Upon request by Picard for the return of defective parts, all shipping charges for the return to Picard of the alleged defective parts are the responsibility of the client, which must be received by Picard freight prepaid, otherwise Picard may refuse delivery. 7. Upon request by Picard for the return of defective parts, all returned alleged defective parts must be properly packed and tagged, stating serial number, number & model number of equipment, original invoice number(s), claim authorization number and date,before shipment to: Picard Ovens Inc. 1325 East Notre-Dame Victoriaville,Quebec, Canada G6P 4B8 Tel : 1-800-668-1883 Email:info@picardovens.com 8. The client must contact directly its dealer or the person having installed the equipment in all cases of faulty installation or the non applicability of the labour warranty,as provided herein. No representative, agency, dealer, distributor or any other person than a Picard duly authorized officer is allowed or permitted to modify or extend the terms, conditions, exclusions and limitations of this Limited Warranty, nor to create any obligation or liability whatsoever for Picard, nor to contract, make any offer, proposal or settlement under Picard's name, including the settlement of any claim under this Limited Warranty. The terms, conditions, exclusions and limitations of this Limited Warranty may only be changed by Picard itself, which retains the right to modify, at its sole discretion and from time to time, any of the terms, conditions, exclusions and limitations of this Limited Warranty. The posting of a new modified Limited Warranty on Picard's web site shall automatically amend this Limited Warranty and become applicable, without the need to provide copy of such modified version to the client. In case of any litigation or claim whatsoever regarding this Limited Warranty, the only competent courts shall be the ones of the judicial district of Arthabaska, province of Quebec, Canada.This Limited Warranty and all sales agreements for the equipment shall be construed, interpreted and executed in accordance with the laws in force in the province of Quebec, Canada. Revised:2009-06-15 FUS-0100-1 MU-RE-G-00 41 EXCLUSIONS AND LIMITATIONS OF WARRANTY Without limiting the foregoing terms, conditions, exclusions and limitations applicable to this Limited Warranty,this Limited Warranty does not cover damages, costs, expenses, liabilities, suits, demands or other causes of action resulting from, in any way and of any kind, reasons other than a manufacturing defect in material and factory workmanship of the equipment,including but not limited to, reasons such as a result of accidents,voluntary damages,vandalism,theft,abuse, misuse, negligence, alteration or repair made without the prior written authorization of Picard and in such a case by persons other than Picard's own employees'or authorized Picard service agency, improper storage or handling, faulty or improper installation, maintenance or cleaning or lack thereof, abnormal operating conditions, client related work conditions on the premises, damage or breakdown related to client or third party's other equipment, parts, components or premises, acts of God such as, but not limited to, ,fire, flood, storm and other catastrophic events, war, insurrection and acts of terrorism and similar causes. This Limited Warranty shall be automatically voided if any of the product security labels affixed on the equipment are removed or rendered in any way unreadable. All warranty work, performed by a person other than an authorized Picard service agency shall also void this Limited Warranty. This Limited Warranty is non-transferable to any subsequent client. This Limited Warranty is the one and sole warranty offered by Picard regarding the equipment and is in lieu of any and all other warranties, whether legal, expressed or implied, including all warranties of merchantability, of commercial value or fitness for a particular purpose, which are disclaimed by Picard. Picard shall not be liable for any direct, indirect, consequential or incidental damages, loss, charge, cost or any claim whatsoever, including but not limited to,damages to property, damages for loss of use, loss of time, loss of business opportunity, loss of profits or of income, bodily harm or death and the client's sole remedy shall be limited to the repair or replacement,at Picard's sole option, of defective parts. Without limiting the generality of the foregoing, this Limited Warranty does not extend to, and Picard makes no warranty whatsoever,with respect to and shall not be responsible for,any of the following, all of which are the sole responsibility of the installer of the Picard equipment involved and/or the client itself: Compliance with all legal and regulatory requirements, codes, specifications and other standards of local, provincial, state and national authorities, including, without limitation, with regard to fire safety, construction, electricity, gas, installation, maintenance,cleaning and operation of the equipment, ✓ Proper installation of Picard equipment,including gas piping,water piping,electrical work and all other hook- ups,all of which must be done by licensed trades, ✓ Duck work,exhaust fans other than the ones supplied with Picard oven and venting, ✓ Rigging, forklifts, special moving equipment and assistance required to lift oven sections, and receipt and off-loading of Picard equipment upon delivery, ✓ Tightening fittings and other minor adjustments of Picard equipment, and ✓ Wear items including but not limited to light bulbs, belts, fuses, pilot lights, thermocouples for burners and periodic cleaning of burners. In no event may the client bring any claim, suit or other cause of action whosoever against Picard later than one(1)year after any claim,suit or cause of action arose and after the expiration of this Limited Warranty,the earlier of the two.
